雞西冷麵是「中朝合壁」的產物。冷麵本是朝鮮族的傳統食品，是用蕎麥面或小麥面加澱粉加水拌勻，壓成圓面條，煮熟後浸以冷水，再去冷水伴牛肉片、辣泡菜、梨或蘋果片、醬醋、香油等佐料，加入牛肉湯即成。以前漢族人看到壓製冷麵的器具是木盒子，便稱為「盒勒面」。

雞西辣菜又被稱為冷麵菜，是由傳統朝鮮族辣菜發展來的。朝鮮族原只有白菜等幾種辣泡菜（也稱京漬），而雞西冷麵菜以辣拌為主，有干豆腐，桔梗，豆腐泡，豆圈、海帶絲、海桔梗、黃花菜、干魚絲、蕨菜、牛肉、豬耳朵，峴子等五十多餘種。凡常見的蔬菜、肉類和海鮮均可入菜。

雞西市在地理位置上處在東經130°24′24〃—133°56′30〃，北緯44°51′12〃—46°36′55〃，位於黑龍江省東南部,與牡丹江市、七台河市毗鄰，東、東南與俄羅斯交界，總面積22,531平方公里，轄雞冠,恆山,滴道,梨樹,城子河,麻山六區,虎林市、雞東縣、密山市，人口200萬，被譽為我國太陽升起最早的地方。

雞西河川秀麗。未開墾荒地面積44萬公頃，占土地總面積的19.4%，其中草原沼澤面積為22萬公頃。水系資源豐富，62條主要河流總徑流量89.4億立方米。境內最大河流穆棱河，境內流徑長502公里。地下水總儲量98.4億立方米，全地區水資源總量為5393億立方米。全市林地總面積62萬公頃，活立木總蓄積量4592萬立方米，年採伐量42.6萬立方米。
雞西市野生資源豐富。葯材上百種，山產品300餘種，蕨菜、薇菜等聞名中外。有虎、熊、鹿、貂、狍、狼等39種野生動物繁衍生息；魚類65種，其中翹嘴紅鮁（大白魚）為中國四大淡水名魚之一。
雞西市是黑龍江省的重點產糧地區之一。耕地總面積55.4萬公頃，盛產水稻、玉米、大豆、蔬菜等。全市有11個大型國有農場，糧食平均年產量200萬噸。已建成綠色食品基地12個，有9個品種、22個產品獲得綠色食品標志，綠色食品產值達6億元。
雞西市生態環境良好，天藍、地凈、水清，是座新興的旅遊城市，具有發展生態旅遊、邊境游、跨國游的基礎條件。有煙波浩渺、氣勢磅礴的北國綠寶石興凱湖；有水深流急的烏蘇里江；有二戰遺址、被稱作「東方馬其諾防線」的虎頭地下軍事要塞；有舉世聞名的中蘇自衛反擊戰發生地珍寶島；有祖國最早看到日出的邊境山峰之一神頂峰；有歷經百年滄桑的「東方第一廟」虎頭關帝廟；有集自然景觀與人文景觀為一體的麒麟山、卧龍湖、哈達河、八楞山、鳳凰山森林公園、北大荒書法藝術長廊、遼金古城遺址等旅遊景區。
雞西市有良好的投資環境。中俄邊境線長631公里，現已開通密山和吉祥兩個國家一級陸路口岸。年過貨量可達200萬噸，過車能力600-900車次/日，驗放能力可達85萬人次/年。
